Founder Christopher Collins envisions Cowboy Seafood as the culmination of his culinary experiences, delivering a "hospitality-forward dining experience" that showcases his passion for both food and community.
The Smoke and Surf Concept Comes to Life
What sets Cowboy Seafood apart is its commitment to quality, with barbecue prepared using a custom dual-spit Santa Maria grill and state-of-the-art smokers developed in collaboration with some of Texas's top pitmasters. Guests can expect dishes infused with a distinctive flavor profile created from a blend of oak, pecan, and dried corn husk.

“This food represents who I am and how I grew up,” Collins remarks, referencing his childhood memories of working alongside his father at the Texas Longhorn Bar & Grill, where his family history in barbecue began. At Cowboy Seafood, guests will be invited to enjoy a variety of dishes from St. Louis ribs to grilled seafood options that the Collins family has made famous.
