Launched by Common Ground Culinary, the restaurant aims to blend the rugged charm of a Southern smokehouse with the fresh vitality of a coastal eatery.

The 5,000-square-foot venue will not only feature a vibrant interior but will also highlight a menu that marries competition-level barbecue with an expansive raw bar. Founder Christopher Collins envisions Cowboy Seafood as the culmination of his culinary experiences, delivering a "hospitality-forward dining experience" that showcases his passion for both food and community.
The Smoke and Surf Concept Comes to Life
What sets Cowboy Seafood apart is its commitment to quality, with barbecue prepared using a custom dual-spit Santa Maria grill and state-of-the-art smokers developed in collaboration with some of Texas's top pitmasters. Guests can expect dishes infused with a distinctive flavor profile created from a blend of oak, pecan, and dried corn husk.
A Nod to Tradition and Innovation
“This food represents who I am and how I grew up,” Collins remarks, referencing his childhood memories of working alongside his father at the Texas Longhorn Bar & Grill, where his family history in barbecue began. At Cowboy Seafood, guests will be invited to enjoy a variety of dishes from St. Louis ribs to grilled seafood options that the Collins family has made famous.
Catch of the Day: The Raw Bar Experience
The restaurant will also introduce the Saltwater Saint Raw Bar, featuring fresh catches such as oysters, shrimp, and sushi. Patrons can select from eight different cuts of fish, prepared fresh each day. This dual approach allows diners to enjoy the richness of smoked meats alongside lighter, coastal flavors.

Designed by Ideation Design Group, the décor of Cowboy Seafood is as much a part of the experience as the food. The space will boast rustic elements, with eye-catching features, including a taxidermied swordfish sporting a cowboy hat, visible from Central Avenue.
